Is it possible that the solar panels are getting charge when unattended, just significantly slower? I don''t remember for sure if it''s Kerbalism, but the mod that RSS/RO/RP-1 will in certain situations make assumptions (which are not always right) about the percentage of the orbit that is in sunlight, and use that factor constantly, rather than basing it on actual light exposure.

I''m pretty sure it''s something with Kopernicus from when I tried RSS and after removing all RSS and Kopernicus folders I still can''t use solar panels. Before this I had an issue where my solar panels would deploy but even in direct sunlight they wouldn''t make any power or even show sunlight was hitting the panels.

so, dont get it stuck obviously, but a great failsafe to have in place, is put a backup panel on there. there is one solar panel that is just one single square, is always on, and doesnt need to be unfolded. that way, if you get stuck as above, eventually daytime will come, and the one tiny backup solar cell will "jumpstart" you with enough
